For the Crust:
- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 tbsp baking powder
- 1 tsp ground cinnamon
- 1/2 tsp salt
- 2 large eggs
- 1/2 cup milk
- 2 tbsp melted butter
- 1 tsp vanilla extract
- 2 cups diced apples
- Vegetable oil for frying
Instructions
1. Prepare the Crust:
- In a large bowl, whisk together flour, sugar, baking powder, cinnamon, and salt.
- In another bowl, beat eggs, milk, melted butter, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in diced apples.
- Heat vegetable oil in a deep pan to 350°F (175°C).
- Drop spoonfuls of batter into the hot oil and fry for 2-3 minutes per side until golden brown.
- Remove fritters with a slotted spoon and drain on paper towels.
