For the Crust:

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tbsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 2 large eggs
  • 1/2 cup milk
  • 2 tbsp melted butter
  • 1 tsp vanilla extract
  • 2 cups diced apples
  • Vegetable oil for frying

Instructions

1. Prepare the Crust:

  1. In a large bowl, whisk together flour, sugar, baking powder, cinnamon, and salt.
  2. In another bowl, beat eggs, milk, melted butter, and vanilla extract until smooth.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in diced apples.
  4. Heat vegetable oil in a deep pan to 350°F (175°C).
  5. Drop spoonfuls of batter into the hot oil and fry for 2-3 minutes per side until golden brown.
  6. Remove fritters with a slotted spoon and drain on paper towels.
