Sour Beef-cabbage Soup

A hearty and tangy soup with tender beef and cabbage, perfect for cold days.


Ingredients

For the Crust:

  • 1 lb beef stew meat, cubed
  • 1 small head cabbage, chopped
  • 1 large onion, diced
  • 2 carrots, sliced
  • 4 cups beef broth
  • 2 tbsp tomato paste
  • 2 tbsp vinegar
  • 1 bay leaf
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp vegetable oil

Instructions

1. Prepare the Crust:

  1. Heat oil in a large pot over medium heat. Add beef and brown on all sides.
  2. Add onions and carrots, sauté until softened.
  3. Stir in cabbage, beef broth, tomato paste, vinegar, bay leaf, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 25-30 minutes until beef is tender.
  5. Remove bay leaf before serving.

Notes

You can customize the seasonings to taste.
