Juicy chicken meatballs with a tangy and slightly sweet sauce, perfect for a quick and flavorful meal.

Ingredients

Scale

For the Crust:

  • 1 lb ground chicken
  • 1/2 cup breadcrumbs
  • 1 egg
  • 2 cloves garlic, minced
  • 1/4 cup chopped parsley
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil
  • 1/2 cup chicken broth
  • 2 tbsp soy sauce
  • 2 tbsp honey
  • 1 tbsp apple cider vinegar
  • 1 tsp cornstarch mixed with 1 tbsp water

Instructions

1. Prepare the Crust:

  1. In a bowl, combine ground chicken, breadcrumbs, egg, garlic, parsley, salt, and pepper. Mix well and form into small meatballs.
  2. Heat olive oil in a skillet over medium heat. Add meatballs and cook until browned on all sides and cooked through, about 8-10 minutes. Remove from skillet and set aside.
  3. In the same skillet, add chicken broth, soy sauce, honey, and apple cider vinegar. Bring to a simmer.
  4. Stir in the cornstarch mixture and cook until the sauce thickens, about 2 minutes.
  5. Return the meatballs to the skillet and toss to coat in the sauce. Serve warm.
