For the Crust:
- 1 lb ground chicken
- 1/2 cup breadcrumbs
- 1 egg
- 2 cloves garlic, minced
- 1/4 cup chopped parsley
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
- 1/2 cup chicken broth
- 2 tbsp soy sauce
- 2 tbsp honey
- 1 tbsp apple cider vinegar
- 1 tsp cornstarch mixed with 1 tbsp water
Instructions
1. Prepare the Crust:
- In a bowl, combine ground chicken, breadcrumbs, egg, garlic, parsley, salt, and pepper. Mix well and form into small meatballs.
- Heat olive oil in a skillet over medium heat. Add meatballs and cook until browned on all sides and cooked through, about 8-10 minutes. Remove from skillet and set aside.
- In the same skillet, add chicken broth, soy sauce, honey, and apple cider vinegar. Bring to a simmer.
- Stir in the cornstarch mixture and cook until the sauce thickens, about 2 minutes.
- Return the meatballs to the skillet and toss to coat in the sauce. Serve warm.
