For the Crust:
- 1 cup granulated sugar
- 1 cup packed brown sugar
- 1/2 cup heavy cream
- 4 tablespoons unsalted butter
- 1 teaspoon vanilla extract
- 1 1/2 cups pecan halves
Instructions
1. Prepare the Crust:
- In a medium saucepan, combine granulated sugar, brown sugar, and heavy cream. Cook over medium heat, stirring constantly, until sugars dissolve.
- Bring mixture to a boil and cook until it reaches 240°F (soft-ball stage) on a candy thermometer, about 5-7 minutes.
- Remove from heat and stir in butter, vanilla, and pecans. Stir vigorously until mixture thickens and becomes creamy.
- Drop by tablespoonfuls onto parchment paper. Let cool completely before serving.
