For the Crust:

  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 1/2 cup heavy cream
  • 4 tablespoons unsalted butter
  • 1 teaspoon vanilla extract
  • 1 1/2 cups pecan halves

Instructions

1. Prepare the Crust:

  1. In a medium saucepan, combine granulated sugar, brown sugar, and heavy cream. Cook over medium heat, stirring constantly, until sugars dissolve.
  2. Bring mixture to a boil and cook until it reaches 240°F (soft-ball stage) on a candy thermometer, about 5-7 minutes.
  3. Remove from heat and stir in butter, vanilla, and pecans. Stir vigorously until mixture thickens and becomes creamy.
  4. Drop by tablespoonfuls onto parchment paper. Let cool completely before serving.
