For the Crust:
- 2 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 can (15 oz) black beans, rinsed and drained
- 1 cup corn kernels (fresh or frozen)
- 1 avocado, diced
- 1/2 red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1 lime, juiced
- 2 tbsp sour cream
- 4 cups mixed greens
Instructions
1. Prepare the Crust:
- Preheat grill or grill pan over medium-high heat. Rub chicken breasts with olive oil and season with chili powder, cumin, garlic powder, salt, and pepper.
- Grill chicken for 6-7 minutes per side or until fully cooked. Let rest for 5 minutes, then slice into strips.
- In a large bowl, combine black beans, corn, avocado, red onion, and cilantro.
- In a small bowl, whisk together lime juice and sour cream to make the dressing.
- Toss the mixed greens with half of the dressing, then divide among plates. Top with the bean and corn mixture and sliced chicken. Drizzle with remaining dressing before serving.
