For the Crust:
- 1 lb ground beef
- 2 cups fresh spinach, chopped
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tbsp taco seasoning
- 8 small corn tortillas
- 1/2 cup shredded cheese
- 1/4 cup sour cream
- 1/4 cup salsa
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Heat olive oil in a skillet over medium heat. Add onions and garlic, sauté until softened.
- Add ground beef to the skillet and cook until browned. Drain excess fat if needed.
- Stir in taco seasoning, salt, and pepper. Add chopped spinach and cook until wilted.
- Warm the tortillas in a dry skillet or microwave.
- Assemble tacos by spooning the beef-spinach mixture onto tortillas. Top with cheese, sour cream, and salsa.
- Serve immediately and enjoy.
