For the Crust:

  • 1 lb ground beef
  • 2 cups fresh spinach, chopped
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp taco seasoning
  • 8 small corn tortillas
  • 1/2 cup shredded cheese
  • 1/4 cup sour cream
  • 1/4 cup salsa
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Heat olive oil in a skillet over medium heat. Add onions and garlic, sauté until softened.
  2. Add ground beef to the skillet and cook until browned. Drain excess fat if needed.
  3. Stir in taco seasoning, salt, and pepper. Add chopped spinach and cook until wilted.
  4. Warm the tortillas in a dry skillet or microwave.
  5. Assemble tacos by spooning the beef-spinach mixture onto tortillas. Top with cheese, sour cream, and salsa.
  6. Serve immediately and enjoy.

Notes

You can customize the seasonings to taste.
