Deliciously soft cookies stuffed with a creamy strawberry cheesecake filling.

For the Crust:

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 3 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 cup strawberry jam
  • 1/2 cup fresh strawberries, diced

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in eggs one at a time, then stir in vanilla extract.
  4. In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to the wet ingredients, mixing until combined.
  5. In another bowl, mix cream cheese, powdered sugar, strawberry jam, and diced strawberries until smooth.
  6. Take a tablespoon of cookie dough, flatten it, and place a teaspoon of the cheesecake filling in the center. Cover with another tablespoon of dough and seal the edges.
  7. Place cookies on the prepared baking sheets and bake for 12-15 minutes, or until edges are golden brown.
  8. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

You can customize the seasonings to taste.
