For the Crust:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, chilled and cubed
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 large egg yolk
  • 2 tablespoons ice water
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 lb fresh strawberries, hulled and sliced
  • 1/4 cup strawberry jam, warmed

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). In a food processor, combine flour, sugar, and salt. Add chilled butter and pulse until mixture resembles coarse crumbs.
  2. Add egg yolk and ice water, pulsing until dough comes together. Press dough into a 9-inch tart pan, covering the bottom and sides evenly. Prick with a fork and bake for 15-18 minutes until golden. Let cool.
  3. In a bowl, beat cream cheese, powdered sugar, and vanilla until smooth. Spread evenly over the cooled crust. Arrange strawberry slices on top in a decorative pattern. Brush with warmed strawberry jam for a glossy finish. Chill for at least 1 hour before serving.
