For the Crust:
- 4 large bell peppers (any color)
- 1 lb ground beef
- 1 cup cooked rice
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes, drained
- 1 tsp dried oregano
- 1 tsp salt
- 1/2 tsp black pepper
- 1 cup shredded cheddar cheese
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Cut the tops off the bell peppers and remove seeds and membranes.
- In a skillet, brown the ground beef over medium heat. Drain excess fat.
- Add onion, garlic, diced tomatoes, oregano, salt, and pepper. Cook for 5 minutes until onions are soft.
- Stir in cooked rice and mix well. Remove from heat.
- Stuff each bell pepper with the beef and rice mixture. Place in a baking dish.
- Cover with foil and bake for 25 minutes. Remove foil, sprinkle with cheese, and bake for another 5 minutes until cheese is melted.
