Taco Potatoes

A delicious twist on traditional tacos, using crispy baked potatoes as the base for all your favorite taco toppings.

For the Crust:

  • 4 large russet potatoes
  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped green onions
  • 1/4 cup sliced black olives
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Scrub potatoes, dry them, and pierce with a fork. Rub with olive oil and sprinkle with salt.
  2. Bake potatoes for 45-50 minutes until tender. Let cool slightly, then slice open and fluff the insides with a fork.
  3. While potatoes bake, brown ground beef in a skillet over medium heat. Drain fat, then add taco seasoning and water as directed on the packet. Simmer for 5 minutes.
  4. Top each potato with seasoned beef, cheese, sour cream, tomatoes, green onions, and olives.
  5. Serve immediately while hot.

Notes

You can customize the seasonings to taste.
