A delicious twist on traditional tacos, using crispy baked potatoes as the base for all your favorite taco toppings.

For the Crust:
- 4 large russet potatoes
- 1 lb ground beef
- 1 packet taco seasoning
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/2 cup diced tomatoes
- 1/4 cup chopped green onions
- 1/4 cup sliced black olives
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Scrub potatoes, dry them, and pierce with a fork. Rub with olive oil and sprinkle with salt.
- Bake potatoes for 45-50 minutes until tender. Let cool slightly, then slice open and fluff the insides with a fork.
- While potatoes bake, brown ground beef in a skillet over medium heat. Drain fat, then add taco seasoning and water as directed on the packet. Simmer for 5 minutes.
- Top each potato with seasoned beef, cheese, sour cream, tomatoes, green onions, and olives.
- Serve immediately while hot.
