For the Crust:
- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1 large egg
- 1 tbsp lemon zest
- 1 tbsp fresh lemon juice
- 1 tsp dried culinary lavender
- 1/4 tsp salt
- 1/2 tsp baking powder
Instructions
1. Prepare the Crust:
- Preheat oven to 350Β°F (175Β°C) and line a baking sheet with parchment paper.
- In a bowl, cream together butter and sugar until light and fluffy. Add egg, lemon zest, and lemon juice, mixing well.
- In a separate bowl, whisk together flour, salt, baking powder, and lavender. Gradually add dry ingredients to the wet mixture, mixing until combined.
- Drop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them 2 inches apart.
- Bake for 10-12 minutes or until edges are lightly golden. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
