For the Crust:

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 tbsp lemon zest
  • 1 tbsp fresh lemon juice
  • 1 tsp dried culinary lavender
  • 1/4 tsp salt
  • 1/2 tsp baking powder

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350Β°F (175Β°C) and line a baking sheet with parchment paper.
  2. In a bowl, cream together butter and sugar until light and fluffy. Add egg, lemon zest, and lemon juice, mixing well.
  3. In a separate bowl, whisk together flour, salt, baking powder, and lavender. Gradually add dry ingredients to the wet mixture, mixing until combined.
  4. Drop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them 2 inches apart.
  5. Bake for 10-12 minutes or until edges are lightly golden. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
