For the Crust:
- 8 oz pasta (rotini or penne)
- 1 can (5 oz) tuna, drained
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, diced
- 1/4 cup cucumber, diced
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp fresh parsley, chopped
Instructions
1. Prepare the Crust:
- Cook pasta according to package instructions. Drain and rinse under cold water.
- In a large bowl, combine pasta, tuna, cherry tomatoes, red onion, and cucumber.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Pour dressing over the pasta mixture and toss gently to combine.
- Sprinkle with fresh parsley before serving.
