Tuna Pasta Salad

A refreshing and protein-packed pasta salad with tuna, crisp vegetables, and a light dressing.

For the Crust:

  • 8 oz pasta (rotini or penne)
  • 1 can (5 oz) tuna, drained
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, diced
  • 1/4 cup cucumber, diced
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp fresh parsley, chopped

Instructions

1. Prepare the Crust:

  1. Cook pasta according to package instructions. Drain and rinse under cold water.
  2. In a large bowl, combine pasta, tuna, cherry tomatoes, red onion, and cucumber.
  3. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  4. Pour dressing over the pasta mixture and toss gently to combine.
  5. Sprinkle with fresh parsley before serving.

You can customize the seasonings to taste.
