For the Crust:
- 2 cups Greek yogurt
- 1 cup granulated sugar
- 3 large eggs
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1 tsp vanilla extract
- 1/4 tsp salt
- 1 tbsp lemon zest
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and grease a 9-inch round cake pan.
- In a large bowl, whip Greek yogurt and sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and lemon zest.
- Sift together flour, baking powder, and salt. Gently fold into the yogurt mixture.
- Pour batter into prepared pan and bake for 30 minutes or until a toothpick comes out clean.
- Let cool before serving.
