For the Crust:

  • 2 cups Greek yogurt
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1 tbsp lemon zest

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a large bowl, whip Greek yogurt and sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and lemon zest.
  4. Sift together flour, baking powder, and salt. Gently fold into the yogurt mixture.
  5. Pour batter into prepared pan and bake for 30 minutes or until a toothpick comes out clean.
  6. Let cool before serving.
