For the Crust:

  • 1 cup whole wheat flour
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup cottage cheese
  • 1/2 cup honey
  • 1/4 cup milk
  • 1 egg
  • 1 tsp vanilla extract
  • 1 cup fresh blueberries

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together whole wheat flour, all-purpose flour, baking powder, baking soda, and salt.
  3. In another bowl, blend cottage cheese, honey, milk, egg, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Gently fold in the blueberries.
  6. Divide the batter evenly among the muffin cups, filling each about 3/4 full.
  7. Bake for 20-25 minutes or until a toothpick inserted comes out clean.
  8. Allow muffins to cool in the tin for 5 minutes before transferring to a wire rack.
