Ingredients

  • 2 cups fresh blueberries
  • 3 ripe peaches, sliced
  • 1/2 cup crumbled feta cheese
  • 4 cups mixed greens
  • 1/4 cup chopped red onion
  • 1/4 cup chopped fresh mint
  • For the vinaigrette: 3 tablespoons olive oil
  • 2 tablespoons honey
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the mixed greens, blueberries, sliced peaches, feta cheese, red onion, and fresh mint.
  2. In a small bowl, whisk together the olive oil, honey, lemon juice, Dijon mustard, salt, and pepper to make the vinaigrette.
