These wholesome blueberry oatmeal breakfast bars are packed with fiber and bursting with juicy blueberries. Perfect for meal prep, they stay fresh for days and make a great on-the-go breakfast or snack.

For the Crust:
- For the base and topping:
- 2 cups old-fashioned rolled oats
- 1 cup whole wheat flour
- 1/2 cup brown sugar
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 large egg
- 1 teaspoon vanilla extract
- For the filling:
- 2 cups fresh or frozen blueberries
- 2 tablespoons lemon juice
- 2 tablespoons honey
- 1 tablespoon cornstarch
- 1/2 teaspoon ground cinnamon
Instructions
1. Prepare the Crust:
- 1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
- 2. In a large bowl, mix oats, flour, brown sugar, baking soda, and salt for the base.
- 3. Add melted butter, egg, and vanilla to dry ingredients. Mix until crumbly.
- 4. Reserve 1 cup of the mixture for topping. Press remaining mixture firmly into prepared pan.
- 5. In a saucepan, combine blueberries, lemon juice, honey, cornstarch, and cinnamon. Cook over medium heat for 5 minutes until thickened.
- 6. Spread blueberry filling over crust. Sprinkle reserved oat mixture on top.
- 7. Bake for 30-35 minutes until golden brown. Cool completely before cutting into bars.
Notes
For vegan version: substitute butter with coconut oil and egg with flax egg. Bars firm up as they cool – don’t skip the cooling step! Store in airtight container for up to 5 days or freeze for 2 months.
