These wholesome blueberry oatmeal breakfast bars are packed with fiber and bursting with juicy blueberries. Perfect for meal prep, they stay fresh for days and make a great on-the-go breakfast or snack.

For the Crust:

  • For the base and topping:
  • 2 cups old-fashioned rolled oats
  • 1 cup whole wheat flour
  • 1/2 cup brown sugar
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • For the filling:
  • 2 cups fresh or frozen blueberries
  • 2 tablespoons lemon juice
  • 2 tablespoons honey
  • 1 tablespoon cornstarch
  • 1/2 teaspoon ground cinnamon

Instructions

1. Prepare the Crust:

  1. 1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  2. 2. In a large bowl, mix oats, flour, brown sugar, baking soda, and salt for the base.
  3. 3. Add melted butter, egg, and vanilla to dry ingredients. Mix until crumbly.
  4. 4. Reserve 1 cup of the mixture for topping. Press remaining mixture firmly into prepared pan.
  5. 5. In a saucepan, combine blueberries, lemon juice, honey, cornstarch, and cinnamon. Cook over medium heat for 5 minutes until thickened.
  6. 6. Spread blueberry filling over crust. Sprinkle reserved oat mixture on top.
  7. 7. Bake for 30-35 minutes until golden brown. Cool completely before cutting into bars.

Notes

For vegan version: substitute butter with coconut oil and egg with flax egg. Bars firm up as they cool – don’t skip the cooling step! Store in airtight container for up to 5 days or freeze for 2 months.
