Description

Ingredients

  • 4 cups chopped cabbage
  • 4 large carrots, chopped
  • 4 stalks celery, chopped
  • 1 large onion, chopped
  • 2 green bell peppers, chopped
  • 1 can (28 oz) diced tomatoes
  • 1 envelope dry onion soup mix
  • Salt and pepper to taste
  • 8 cups water or vegetable broth

Instructions

  1. In a large pot over high heat, combine the cabbage, carrots, celery, onion, green peppers, diced tomatoes (with juice), and water or broth.
  2. Bring to a boil, then reduce heat to medium-low and simmer for about 1 hour, or until vegetables are tender.
  3. Stir in the dry onion soup mix and season with salt and pepper to taste.
  4. Cook for an additional 5 minutes, then serve hot.
