Description

Grilled eggplant slices stuffed with fresh mozzarella, tomatoes, and basil, inspired by the classic Caprese salad.


Ingredients

  • 2 large eggplants, sliced lengthwise into 1/4-inch thick slices
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 4 ounces fresh mozzarella, sliced
  • 2 medium tomatoes, sliced
  • Fresh basil leaves
  • Balsamic glaze for drizzling

Instructions

  1. Preheat the grill to medium-high heat.
  2. Brush the eggplant slices with olive oil and season with salt and pepper.
  3. Grill the eggplant slices for 2-3 minutes on each side until tender.
  4. Remove from grill and let cool slightly.
  5. On each eggplant slice, place a slice of mozzarella, a slice of tomato, and a basil leaf.
  6. Roll up the eggplant slices and secure with toothpicks if needed.
  7. Drizzle with balsamic glaze before serving.
