- 1 sheet puff pastry, thawed
- 2 medium tomatoes, sliced
- 8 oz fresh mozzarella, sliced
- Fresh basil leaves, to taste
- 2 tbsp olive oil
- Salt and pepper, to taste
- Balsamic glaze for drizzling
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Roll out the puff pastry sheet and cut into 2-inch squares.
- Place a slice of tomato and mozzarella on each square, then top with a basil leaf.
- Season with salt and pepper, and drizzle with olive oil.
- Fold the edges of the pastry over the filling and bake for 15-20 minutes until golden.
- Remove from oven and drizzle with balsamic glaze before serving.
Notes
For best results, use ripe tomatoes and fresh mozzarella. These can be served warm or at room temperature.
