Ingredients

  • For the bars:
  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1 cup vegetable oil
  • 2 cups grated carrots
  • 1/2 cup chopped walnuts (optional)
  • For the cream cheese frosting:
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F. Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, beat eggs and oil until combined. Stir in grated carrots and walnuts if using.
  4. Gradually add dry ingredients to wet, mixing just until combined. Pour batter into prepared pan.
  5. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool completely.
  6. For frosting: Beat cream cheese and butter until smooth. Gradually add powdered sugar and vanilla, beating until creamy.
  7. Spread frosting over cooled bars. Refrigerate for at least 1 hour before cutting into bars.

Notes

Store in an airtight container in the refrigerator for up to 5 days. These bars can be made ahead and frosted just before serving.
