These decadent carrot cake bars are moist and flavorful with a rich cream cheese frosting. They’re easy to make and perfect for any occasion.

- For the bars:
- 2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 3 large eggs
- 1 cup vegetable oil
- 2 cups grated carrots
- 1/2 cup chopped walnuts (optional)
- For the cream cheese frosting:
- 8 oz cream cheese, softened
- 1/2 cup unsalted butter, softened
- 3 cups powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F. Grease and flour a 9×13 inch baking pan.
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, beat eggs and oil until combined. Stir in grated carrots and walnuts if using.
- Gradually add dry ingredients to wet, mixing just until combined. Pour batter into prepared pan.
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool completely.
- For frosting: Beat cream cheese and butter until smooth. Gradually add powdered sugar and vanilla, beating until creamy.
- Spread frosting over cooled bars. Refrigerate for at least 1 hour before cutting into bars.
Notes
Store in an airtight container in the refrigerator for up to 5 days. These bars can be made ahead and frosted just before serving.
