  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon cream of tartar
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 tablespoons granulated sugar (for cinnamon sugar topping)
  • 2 teaspoons ground cinnamon (for cinnamon sugar topping)
  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 large egg yolk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350Β°F (175Β°C). Line an 8Γ—8-inch baking pan with parchment paper.
  2. In a large bowl, cream together butter and 3/4 cup sugar until light and fluffy. Beat in egg and vanilla.
  3. In a separate bowl, whisk together flour, cream of tartar, baking soda, and salt. Gradually add to the butter mixture until combined.
  4. Press the dough evenly into the prepared pan.
  5. For the cheesecake layer: Beat cream cheese and 1/4 cup sugar until smooth. Add egg yolk and vanilla, mixing until incorporated.
  6. Drop spoonfuls of the cheesecake mixture over the dough and swirl with a knife or toothpick.
  7. Mix 2 tablespoons sugar and cinnamon; sprinkle over the top.
  8. Bake for 25-30 minutes or until edges are golden. Cool completely before cutting.
