  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 1/2 cup maraschino cherry juice
  • 1 cup maraschino cherries, chopped
  • 1 cup semi-sweet chocolate chips
  • For the glaze:
  • 1 cup powdered sugar
  • 2 tablespoons maraschino cherry juice
  • 1/2 teaspoon vanilla extract

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease and flour a 10-inch bundt pan.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  3. Add softened butter and mix until the mixture resembles coarse crumbs.
  4. Beat in eggs one at a time, then add vanilla extract.
  5. Alternately add buttermilk and cherry juice, mixing until just combined.
  6. Fold in chopped cherries and chocolate chips.
  7. Pour batter into the prepared bundt pan and smooth the top.
  8. Bake for 50-60 minutes, or until a toothpick inserted comes out clean.
  9. Let the cake cool in the pan for 15 minutes, then invert onto a wire rack to cool completely.
  10. For the glaze, whisk together powdered sugar, cherry juice, and vanilla until smooth.
  11. Drizzle glaze over the cooled cake before serving.

Notes

For extra cherry flavor, add 1/2 teaspoon of almond extract to the batter. Store leftovers in an airtight container at room temperature for up to 3 days.
