For the Crust:

- 1 cup creamy peanut butter
- 1/2 cup honey
- 1/4 cup coconut oil
- 1 tsp vanilla extract
- 2 cups old-fashioned rolled oats
- 1/4 cup ground flaxseed
- For the topping:
- 1/4 cup mini chocolate chips
- 2 tbsp melted peanut butter (for drizzling)
Instructions
1. Prepare the Crust:
- 1. Line an 8×8-inch baking dish with parchment paper.
- 2. In a medium saucepan, combine peanut butter, honey, and coconut oil. Heat over low heat, stirring until smooth.
- 3. Remove from heat and stir in vanilla extract.
- 4. Add oats and flaxseed, mixing until fully coated.
- 5. Press the mixture firmly into the prepared pan.
- 6. Sprinkle mini chocolate chips evenly over the top.
- 7. Drizzle with melted peanut butter.
- 8. Chill in the refrigerator for at least 1 hour before cutting into bars.

Store in an airtight container in the fridge for up to 1 week. For a firmer texture, freeze for 20 minutes before slicing.
