  • 1/4 cup coconut oil

  • 2 cups old-fashioned rolled oats
  • 1/4 cup ground flaxseed
  • For the topping:
  • 1/4 cup mini chocolate chips
  • 2 tbsp melted peanut butter (for drizzling)

Instructions

1. Prepare the Crust:

  1. 1. Line an 8×8-inch baking dish with parchment paper.
  2. 2. In a medium saucepan, combine peanut butter, honey, and coconut oil. Heat over low heat, stirring until smooth.
  3. 3. Remove from heat and stir in vanilla extract.
  4. 4. Add oats and flaxseed, mixing until fully coated.
  5. 5. Press the mixture firmly into the prepared pan.
  6. 6. Sprinkle mini chocolate chips evenly over the top.
  7. 7. Drizzle with melted peanut butter.
  8. 8. Chill in the refrigerator for at least 1 hour before cutting into bars.

Notes

Store in an airtight container in the fridge for up to 1 week. For a firmer texture, freeze for 20 minutes before slicing.
