Ingredients

  • 1 pound boneless chicken thighs, cut into bite-sized pieces
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 4 cups chicken broth
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • For the dumplings: 1 cup flour, 2 tsp baking powder, 1/2 tsp salt, 1/2 cup milk

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chicken and cook until browned, about 5 minutes.
  3. Add onion, carrots, celery, and garlic; cook until softened, about 5 minutes.
  4. Pour in chicken broth and bring to a simmer.
  5. In a bowl, mix flour, baking powder, salt, and milk to form dumpling dough.
  6. Drop spoonfuls of dough into the simmering broth.
  7. Cover and cook for 15 minutes until dumplings are cooked through.
  8. Serve hot. For dumplings section: Ensure dough is not overmixed.
