Description

A festive Christmas twist on traditional Greek salad, featuring colorful skewers with cherry tomatoes, cucumber, olives, and feta, drizzled with a tangy dressing. Perfect as an appetizer or side dish for holiday gatherings.


Ingredients

  • 1 pint cherry tomatoes
  • 1 large English cucumber, sliced into 1-inch pieces
  • 1 red onion, cut into chunks
  • 1/2 cup Kalamata olives
  • 8 oz feta cheese, cubed
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 24 wooden skewers

Instructions

  1. Prepare the dressing: In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, oregano, salt, and pepper. Set aside.
  2. Assemble the skewers: Thread onto each skewer one cherry tomato, one cucumber piece, one onion chunk, one olive, and one feta cube. Repeat the pattern if skewers are long enough.
  3. Arrange the skewers on a platter.
  4. Drizzle with the prepared dressing just before serving to keep them fresh.
  5. Serve chilled or at room temperature as an appetizer.

Notes

For best results, assemble skewers just before serving to prevent sogginess. Adjust seasoning in the dressing to taste. These can be made vegan by omitting the feta.
