- Macarons:
- 1 1/2 cups almond flour
- 1 1/2 cups powdered sugar
- 3 large egg whites, at room temperature
- 1/4 cup granulated sugar
- Green food coloring
- Gold edible glitter (for decoration)
- Raspberry Pistachio Filling:
- 1/2 cup heavy cream
- 4 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1/3 cup raspberry jam
- 1/4 cup pistachio paste
Instructions
- Macarons:
- Preheat oven to 300°F (150°C). Line baking sheets with parchment paper.
- Sift together almond flour and powdered sugar.
- Whip egg whites until foamy, add granulated sugar gradually, and beat until stiff peaks form. Add green food coloring.
- Fold dry ingredients into meringue gently.
- Pipe onto parchment in Christmas tree shapes, sprinkle with gold glitter.
- Let rest for 30 minutes, then bake for 12-15 minutes.
- Filling:
- Whip cream to soft peaks.
- Beat cream cheese and powdered sugar, mix in raspberry jam and pistachio paste.
- Fold in whipped cream.
- Assemble macarons by sandwiching filling between two shells.
Notes
These macarons may require practice to perfect. Store in an airtight container for up to 2 days. Adjust food coloring for desired shade.
