Ingredients

  • 1 small watermelon, seeded and cut into 1-inch cubes
  • 1 cucumber, peeled and cut into 1-inch cubes
  • 8 oz feta cheese, cut into 1-inch cubes
  • 1/4 cup fresh mint leaves, chopped
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. In a large bowl, gently toss the watermelon cubes, cucumber cubes, and feta cubes together.
  2. Add the chopped mint, olive oil, and balsamic vinegar.
  3. Season with salt and pepper to taste.
  4. Mix everything gently to combine without breaking the cubes.
  5. Refrigerate for at least 30 minutes before serving to allow flavors to meld.
  6. Serve chilled as a fresh appetizer.

Notes
