- 4 egg whites
- 1 cup granulated sugar
- 1 tsp vanilla extract
- 1 cup heavy whipping cream
- 2 tbsp powdered sugar
- Fresh berries (such as strawberries, blueberries, raspberries)
- Mint leaves for garnish (optional)
Instructions
- Preheat oven to 225°F (107°C). Line a baking sheet with parchment paper.
- In a clean bowl, beat egg whites until foamy. Gradually add sugar, beating until stiff peaks form.
- Fold in vanilla extract.
- Using a piping bag with a star tip, pipe meringue onto parchment to form wreath shapes (rings with spaces for 'hanging' berries).
- Bake for 2 hours or until dry. Turn off oven and leave meringues inside to cool.
- Whip cream with powdered sugar until stiff peaks form.
- Pipe whipped cream into the center of each meringue wreath.
- Top with fresh berries and garnish with mint if desired.
Notes
Store meringues in an airtight container. Whip cream just before serving to keep them fresh.
