Classic Beef Stew

Description

A hearty and comforting beef stew with tender chunks of beef, carrots, potatoes, and peas in a rich, savory broth.

For the Crust:

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 carrots, peeled and sliced
  • 4 potatoes, peeled and cubed
  • 4 cups beef broth
  • 1 cup frozen peas
  • 2 tbsp tomato paste
  • 1 tsp thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Heat olive oil in a large pot over medium-high heat. Brown the beef cubes on all sides, then remove and set aside.
  2. In the same pot, sauté onion and garlic until fragrant. Add carrots and potatoes, cooking for 5 minutes.
  3. Return beef to the pot. Add beef broth, tomato paste, thyme, bay leaf, salt, and pepper. Bring to a boil, then reduce heat and simmer covered for 1.5 hours.
  4. Stir in frozen peas and cook for an additional 10 minutes. Remove bay leaf before serving.

Notes

You can customize the seasonings to taste.
