For the Crust:

  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together butter and sugar until light and fluffy. Beat in egg yolk and vanilla.
  3. Gradually mix in flour and salt until just combined. Do not overmix.
  4. Roll dough into 1-inch balls and place on prepared baking sheets. Flatten slightly with a fork.
  5. Bake for 12-15 minutes or until edges are lightly golden. Cool on wire racks.
