French Onion Soup

A classic French onion soup with caramelized onions, rich beef broth, and melted cheese on toasted bread.

For the Crust:

  • 4 large yellow onions, thinly sliced
  • 4 tablespoons unsalted butter
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 4 cups beef broth
  • 1 cup dry white wine
  • 1 tablespoon all-purpose flour
  • 1 teaspoon Worcestershire sauce
  • 1 bay leaf
  • 4 slices French bread, toasted
  • 1 1/2 cups shredded Gruyère cheese

Instructions

1. Prepare the Crust:

  1. Melt butter in a large pot over medium heat. Add onions, sugar, and salt. Cook, stirring occasionally, until onions are deeply caramelized (about 30 minutes).
  2. Sprinkle flour over onions and stir to coat. Add wine, beef broth, Worcestershire sauce, and bay leaf. Simmer for 20 minutes.
  3. Preheat broiler. Ladle soup into oven-safe bowls. Top each with a slice of toasted bread and shredded cheese. Broil until cheese is bubbly and golden (2-3 minutes). Serve hot.
