German Bee Sting Cake

Description

A classic German dessert featuring a yeasted cake base topped with a caramelized almond-honey layer and filled with vanilla pastry cream.

For the Crust:

  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 1 packet active dry yeast
  • 1/2 cup warm milk
  • 1 egg
  • 4 tbsp butter, softened
  • 1/4 tsp salt
  • 1/2 cup sliced almonds
  • 1/4 cup honey
  • 4 tbsp butter
  • 2 tbsp sugar
  • 2 cups vanilla pastry cream (store-bought or homemade)

Instructions

1. Prepare the Crust:

  1. Dissolve yeast in warm milk with 1 tsp sugar. Let sit until frothy, about 5 minutes.
  2. Mix flour, sugar, salt, egg, and yeast mixture in a bowl. Knead in softened butter until smooth. Let dough rise for 1 hour.
  3. Preheat oven to 375°F. Roll dough into a rectangle and place on baking sheet.
  4. Melt 4 tbsp butter with honey and 2 tbsp sugar. Stir in almonds. Spread mixture over dough.
  5. Bake for 20-25 minutes until golden. Cool completely.
  6. Slice cake horizontally. Spread pastry cream on bottom layer, then replace top layer.

Notes

You can customize the seasonings to taste.
