For the Crust:
- 1 cup unsalted butter, softened
- 1 1/2 cups granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 cup buttermilk
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla.
- In a separate bowl, whisk together flour, baking soda, and salt. Gradually add dry ingredients to the butter mixture, alternating with buttermilk, until dough forms.
- Roll dough into 1-inch balls and place on prepared baking sheets. Flatten slightly with the bottom of a glass.
- Bake for 10-12 minutes, or until edges are lightly golden. Cool on wire racks before serving.
