Coconut Macaron Cookie Nests are delightful, chewy treats filled with rich chocolate, making them a sweet addition to any gathering. Easy to make and irresistibly delicious!


Ingredients

  • 2 cupsunsweetened shredded coconut
  • 3large egg whites
  • 3/4 cupgranulated sugar
  • 1 teaspoonvanilla extract
  • 1 cupsemi-sweet chocolate chips

Instructions

  1. Preheat your oven to 325°F (165°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whip egg whites until soft peaks form.
  3. Gradually add sugar while beating until stiff peaks form and the mixture is glossy.
  4. Gently fold in shredded coconut and vanilla extract with a spatula.
  5. Scoop heaping tablespoons onto the baking sheet, creating small wells in each.
  6. Bake for 15-20 minutes until golden brown on the edges.
  7. Once cooled, melt chocolate chips and spoon into the wells of each cookie nest.
