For the Crust:
- For the oats:
- 1/2 cup rolled oats
- 1/2 cup milk (dairy or plant-based)
- 1/4 cup Greek yogurt
- 1 tbsp chia seeds
- 1 tbsp maple syrup
- 1/2 tsp vanilla extract
- For the cookie dough mix-ins:
- 1 tbsp almond butter
- 1 tbsp mini chocolate chips
- 1 tbsp chopped walnuts
- 1/2 tsp cinnamon
Instructions
1. Prepare the Crust:
- 1. In a mason jar or airtight container, combine the rolled oats, milk, Greek yogurt, chia seeds, maple syrup, and vanilla extract.
- 2. Stir well until all ingredients are fully incorporated.
- 3. Seal the container and refrigerate overnight (or at least 4 hours).
- 4. In the morning, stir in the almond butter, mini chocolate chips, chopped walnuts, and cinnamon.
- 5. Add a splash of milk if the mixture is too thick.
- 6. Enjoy cold or microwave for 30 seconds if preferred warm.
Notes
For a vegan version, use plant-based yogurt and milk. Substitute almond butter with peanut butter for a different flavor. Oats can be stored in the fridge for up to 3 days.
