A creamy, refreshing fruit salad made with Cool Whip and fresh fruits, perfect for summer gatherings or as a light dessert.

For the Crust:
- For the fruit salad:
- 2 cups fresh strawberries, hulled and quartered
- 1 cup fresh blueberries
- 1 cup fresh pineapple chunks
- 1 cup seedless grapes, halved
- 2 kiwis, peeled and diced
- 1 banana, sliced (add just before serving)
- For the dressing:
- 1 (8 oz) container Cool Whip, thawed
- 1 (3.4 oz) package instant vanilla pudding mix (dry)
- 1/2 cup sour cream
- 1 tbsp honey (optional)
Instructions
1. Prepare the Crust:
- 1. In a large mixing bowl, combine strawberries, blueberries, pineapple, grapes, and kiwis. Gently toss to mix.
- 2. In a separate bowl, whisk together Cool Whip, dry pudding mix, sour cream, and honey (if using) until smooth and creamy.
- 3. Pour the dressing over the fruit mixture and fold gently until all fruit is evenly coated.
- 4. Cover and refrigerate for at least 1 hour before serving to allow flavors to blend.
- 5. Just before serving, add sliced banana and gently mix to prevent browning.
- 6. Garnish with extra fruit or mint leaves if desired. Serve chilled.
Notes
For best texture, add bananas right before serving. Substitute Greek yogurt for sour cream if preferred. Pudding mix must be dry (not prepared).
