- 4 medium potatoes, diced
- 1 small onion, diced
- 2 tbsp vegetable oil
- Salt and pepper to taste
- For Eggs:
- 8 large eggs
- 2 tbsp butter
- Salt and pepper to taste
Instructions
- For Sausage Patties:
- In a bowl, mix ground pork, salt, black pepper, fennel seeds, red pepper flakes, and minced garlic.
- Form mixture into 8 patties.
- Heat a skillet over medium heat, cook patties 4-5 minutes per side until browned and cooked through.
- For Breakfast Potatoes:
- In a large skillet, heat vegetable oil over medium heat.
- Add diced potatoes and onion, season with salt and pepper.
- Cook, stirring occasionally, for 15-20 minutes until potatoes are golden and tender.
- For Eggs:
- In a separate skillet, melt butter over medium heat.
- Crack eggs into skillet, season with salt and pepper, and cook to desired doneness.
- Serve sausage patties, eggs, and potatoes together.
Notes
Sausage can be made ahead and refrigerated. Adjust seasoning to taste for spice level. Serve with hot sauce if desired.
