  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp fennel seeds
  • 1/4 tsp red pepper flakes
  • 1 clove garlic, minced
  • For Breakfast Potatoes:
  • 4 medium potatoes, diced
  • 1 small onion, diced
  • 2 tbsp vegetable oil
  • Salt and pepper to taste
  • For Eggs:
  • 8 large eggs
  • 2 tbsp butter
  • Salt and pepper to taste

Instructions

  1. For Sausage Patties:
  2. In a bowl, mix ground pork, salt, black pepper, fennel seeds, red pepper flakes, and minced garlic.
  3. Form mixture into 8 patties.
  4. Heat a skillet over medium heat, cook patties 4-5 minutes per side until browned and cooked through.
  5. For Breakfast Potatoes:
  6. In a large skillet, heat vegetable oil over medium heat.
  7. Add diced potatoes and onion, season with salt and pepper.
  8. Cook, stirring occasionally, for 15-20 minutes until potatoes are golden and tender.
  9. For Eggs:
  10. In a separate skillet, melt butter over medium heat.
  11. Crack eggs into skillet, season with salt and pepper, and cook to desired doneness.
  12. Serve sausage patties, eggs, and potatoes together.

Notes

Sausage can be made ahead and refrigerated. Adjust seasoning to taste for spice level. Serve with hot sauce if desired.
