Ingredients

- 1 tbsp olive oil
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 4 cups chicken broth
- 2 cups cooked chicken, shredded
- 1 tsp dried thyme
- Salt and pepper to taste
- For the dumplings:
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 cup milk
- 2 tbsp butter, melted
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery; sauté until softened.
- Pour in chicken broth and bring to a boil.
- Add shredded chicken, thyme, salt, and pepper.
- For the dumplings: Mix flour, baking powder, and salt in a bowl.
- Stir in milk and melted butter to form a dough.
- Drop spoonfuls of dough into the simmering soup.
- Cover and cook for 15 minutes until dumplings are cooked through.
- Serve hot.
Notes
Adjust seasoning according to taste. Dumplings can be made ahead and refrigerated.
