Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 4 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • For the dumplings:
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup milk
  • 2 tbsp butter, melted

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery; sauté until softened.
  3. Pour in chicken broth and bring to a boil.
  4. Add shredded chicken, thyme, salt, and pepper.
  5. For the dumplings: Mix flour, baking powder, and salt in a bowl.
  6. Stir in milk and melted butter to form a dough.
  7. Drop spoonfuls of dough into the simmering soup.
  8. Cover and cook for 15 minutes until dumplings are cooked through.
  9. Serve hot.

Notes

Adjust seasoning according to taste. Dumplings can be made ahead and refrigerated.
