Description

These bite-sized phyllo cups are filled with creamy goat cheese, tangy cranberries, and crunchy almonds, finished with a sweet and tangy maple balsamic glaze. Perfect as an elegant appetizer for holiday gatherings or parties.


Ingredients

  • 1 package (15-18 sheets) phyllo dough, thawed
  • 1/2 cup unsalted butter, melted
  • 4 oz goat cheese, softened
  • 1/4 cup honey
  • 1/2 cup dried cranberries, chopped
  • 1/2 cup sliced almonds, toasted
  • 1/4 cup balsamic vinegar
  • 1/4 cup maple syrup
  • Fresh thyme leaves, for garnish

Instructions

  1. Preheat oven to 350°F (175°C). Grease a mini muffin tin.
  2. Cut phyllo dough into squares and layer 4-5 sheets, brushing each with melted butter. Press into muffin cups to form phyllo shells. Bake for 8-10 minutes or until golden. Cool.
  3. In a bowl, mix goat cheese with honey until smooth. Fold in cranberries and almonds.
  4. Spoon mixture into cooled phyllo cups.
  5. In a saucepan, combine balsamic vinegar and maple syrup. Simmer until reduced by half. Drizzle glaze over filled cups.
  6. Garnish with thyme. Serve immediately.

Notes

Store leftovers in the refrigerator for up to 2 days. Reheat in oven to maintain crispness. Adjust sweetness as desired.
