These bite-sized phyllo cups are filled with creamy goat cheese, tangy cranberries, and crunchy almonds, finished with a sweet and tangy maple balsamic glaze. Perfect as an elegant appetizer for holiday gatherings or parties.

- 1 package (15-18 sheets) phyllo dough, thawed
- 1/2 cup unsalted butter, melted
- 4 oz goat cheese, softened
- 1/4 cup honey
- 1/2 cup dried cranberries, chopped
- 1/2 cup sliced almonds, toasted
- 1/4 cup balsamic vinegar
- 1/4 cup maple syrup
- Fresh thyme leaves, for garnish
Instructions
- Preheat oven to 350°F (175°C). Grease a mini muffin tin.
- Cut phyllo dough into squares and layer 4-5 sheets, brushing each with melted butter. Press into muffin cups to form phyllo shells. Bake for 8-10 minutes or until golden. Cool.
- In a bowl, mix goat cheese with honey until smooth. Fold in cranberries and almonds.
- Spoon mixture into cooled phyllo cups.
- In a saucepan, combine balsamic vinegar and maple syrup. Simmer until reduced by half. Drizzle glaze over filled cups.
- Garnish with thyme. Serve immediately.
Notes
Store leftovers in the refrigerator for up to 2 days. Reheat in oven to maintain crispness. Adjust sweetness as desired.
