Ingredients

  • 1 1/2 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
  • 8 oz cremini mushrooms, sliced
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Asiago cheese
  • 1/4 cup chicken broth
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add chicken pieces and season with salt, pepper, and thyme. Cook until browned on all sides, about 6-8 minutes. Remove from pan and set aside.
  3. In the same skillet, add onions and mushrooms. Sauté until onions are translucent and mushrooms are tender, about 5 minutes.
  4. Add garlic and cook for 1 minute until fragrant.
  5. Pour in chicken broth to deglaze the pan, scraping up any browned bits.
  6. Stir in heavy cream and Asiago cheese until the sauce is smooth and bubbly.
  7. Return chicken to the skillet and simmer for 5-7 minutes until chicken is cooked through.
  8. Garnish with fresh parsley and serve hot.
