- 1 1/2 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
- 8 oz cremini mushrooms, sliced
- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Asiago cheese
- 1/4 cup chicken broth
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken pieces and season with salt, pepper, and thyme. Cook until browned on all sides, about 6-8 minutes. Remove from pan and set aside.
- In the same skillet, add onions and mushrooms. Sauté until onions are translucent and mushrooms are tender, about 5 minutes.
- Add garlic and cook for 1 minute until fragrant.
- Pour in chicken broth to deglaze the pan, scraping up any browned bits.
- Stir in heavy cream and Asiago cheese until the sauce is smooth and bubbly.
- Return chicken to the skillet and simmer for 5-7 minutes until chicken is cooked through.
- Garnish with fresh parsley and serve hot.
