A rich and flavorful salmon dish with creamy garlic butter sauce, sun-dried tomatoes, and spinach.

For the Crust:

  • 4 salmon fillets
  • 2 tbsp olive oil
  • 3 tbsp butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp dried oregano
  • 1/4 cup grated parmesan cheese

Instructions

1. Prepare the Crust:

  1. Heat olive oil in a large skillet over medium-high heat. Season salmon fillets with salt and pepper, then sear for 3-4 minutes per side until golden. Remove and set aside.
  2. In the same skillet, melt butter and sauté garlic until fragrant (about 1 minute).
  3. Add heavy cream, chicken broth, sun-dried tomatoes, oregano, salt, and pepper. Bring to a simmer.
  4. Stir in spinach and cook until wilted. Add parmesan cheese and stir until melted.
  5. Return salmon fillets to the skillet and spoon sauce over them. Simmer for 2-3 minutes until salmon is cooked through.

Notes

You can customize the seasonings to taste.
