For the Crust:
- 4 salmon fillets
- 2 tbsp olive oil
- 3 tbsp butter
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup sun-dried tomatoes, chopped
- 2 cups fresh spinach
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp dried oregano
- 1/4 cup grated parmesan cheese
Instructions
1. Prepare the Crust:
- Heat olive oil in a large skillet over medium-high heat. Season salmon fillets with salt and pepper, then sear for 3-4 minutes per side until golden. Remove and set aside.
- In the same skillet, melt butter and sauté garlic until fragrant (about 1 minute).
- Add heavy cream, chicken broth, sun-dried tomatoes, oregano, salt, and pepper. Bring to a simmer.
- Stir in spinach and cook until wilted. Add parmesan cheese and stir until melted.
- Return salmon fillets to the skillet and spoon sauce over them. Simmer for 2-3 minutes until salmon is cooked through.
