- 6 large potatoes, peeled and diced
- 1 onion, chopped
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 6 slices bacon, cooked and crumbled
- Salt and pepper to taste
Instructions
- In a large pot, boil the diced potatoes and chopped onion in chicken broth until potatoes are tender, about 15 minutes.
- Use an immersion blender to puree the mixture until smooth.
- Stir in heavy cream and shredded cheddar cheese, heating until cheese is melted and soup is creamy.
- Add salt and pepper to taste, then serve topped with crumbled bacon.
Notes
For a vegetarian option, substitute bacon with smoked tofu and use vegetable broth.
