For the Crust:
- 1 lb potato gnocchi
- 2 tbsp olive oil
- 8 oz mushrooms, sliced
- 2 cloves garlic, minced
- 2 cups fresh spinach
- 1 cup heavy cream
- 1/2 cup grated parmesan cheese
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp red pepper flakes (optional)
Instructions
1. Prepare the Crust:
- Cook gnocchi according to package instructions. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add mushrooms and sauté until golden, about 5 minutes.
- Add garlic and cook for 1 minute until fragrant. Stir in spinach and cook until wilted.
- Pour in heavy cream and bring to a simmer. Stir in parmesan cheese until melted.
- Add cooked gnocchi to the skillet and toss to coat in the sauce. Season with salt, pepper, and red pepper flakes if using.
- Cook for 2-3 minutes until everything is heated through. Serve immediately.
