For the Crust:

  • 1 lb potato gnocchi
  • 2 tbsp olive oil
  • 8 oz mushrooms, sliced
  • 2 cloves garlic, minced
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes (optional)

Instructions

1. Prepare the Crust:

  1. Cook gnocchi according to package instructions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add mushrooms and sauté until golden, about 5 minutes.
  3. Add garlic and cook for 1 minute until fragrant. Stir in spinach and cook until wilted.
  4. Pour in heavy cream and bring to a simmer. Stir in parmesan cheese until melted.
  5. Add cooked gnocchi to the skillet and toss to coat in the sauce. Season with salt, pepper, and red pepper flakes if using.
  6. Cook for 2-3 minutes until everything is heated through. Serve immediately.

Notes

You can customize the seasonings to taste.
