For the Crust:
- 1 lb ground turkey
- 1/2 cup breadcrumbs
- 1 egg
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil
- 2 cups fresh spinach, chopped
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
Instructions
1. Prepare the Crust:
- In a bowl, mix ground turkey, breadcrumbs, egg, minced garlic, oregano, salt, and pepper until well combined.
- Shape the mixture into 1-inch meatballs.
- Heat olive oil in a large skillet over medium heat. Cook meatballs until browned on all sides and cooked through, about 10 minutes. Remove and set aside.
- In the same skillet, add chopped spinach and sauté until wilted, about 2 minutes.
- Pour in heavy cream and bring to a simmer. Stir in Parmesan cheese until the sauce thickens slightly.
- Return the meatballs to the skillet and coat them with the creamy spinach sauce. Serve warm.
