Description

A rich, creamy soup made with fresh tomatoes and basil, perfect for a comforting meal.


Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups diced tomatoes (fresh or canned)
  • 2 cups vegetable broth
  • 1/2 cup heavy cream
  • 1/4 cup fresh basil leaves, chopped
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and minced garlic, sauté until softened, about 5 minutes.
  3. Add diced tomatoes and vegetable broth, bring to a boil, then simmer for 10 minutes.
  4. Use an immersion blender to purée the soup until smooth.
  5. Stir in heavy cream and chopped basil leaves.
  6. Season with salt and pepper to taste. Simmer for another 5 minutes.
  7. Serve hot.

Notes

For a vegan version, substitute heavy cream with coconut milk. Adjust basil to taste for more flavor.
