A rich, creamy soup made with fresh tomatoes and basil, perfect for a comforting meal.
Ingredients

- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups diced tomatoes (fresh or canned)
- 2 cups vegetable broth
- 1/2 cup heavy cream
- 1/4 cup fresh basil leaves, chopped
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and minced garlic, sauté until softened, about 5 minutes.
- Add diced tomatoes and vegetable broth, bring to a boil, then simmer for 10 minutes.
- Use an immersion blender to purée the soup until smooth.
- Stir in heavy cream and chopped basil leaves.
- Season with salt and pepper to taste. Simmer for another 5 minutes.
- Serve hot.
Notes
For a vegan version, substitute heavy cream with coconut milk. Adjust basil to taste for more flavor.
