Description

A comforting and flavorful soup made with ripe tomatoes, fresh basil, and a touch of cream for richness.


Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups diced tomatoes
  • 1 cup vegetable broth
  • 1/2 cup heavy cream
  • 1/4 cup fresh basil leaves, chopped
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and minced garlic, sauté until softened.
  3. Stir in diced tomatoes and vegetable broth, bring to a simmer.
  4. Cook for 15 minutes, then blend until smooth.
  5. Stir in heavy cream and chopped basil, season with salt and pepper.
  6. Simmer for another 5 minutes before serving.

Notes

For a vegan version, substitute heavy cream with coconut milk. Garnish with extra basil leaves.
