Ingredients

- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups diced tomatoes
- 1 cup vegetable broth
- 1/2 cup heavy cream
- 1/4 cup fresh basil leaves, chopped
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and minced garlic, sauté until softened.
- Stir in diced tomatoes and vegetable broth, bring to a simmer.
- Cook for 15 minutes, then blend until smooth.
- Stir in heavy cream and chopped basil, season with salt and pepper.
- Simmer for another 5 minutes before serving.
Notes
For a vegan version, substitute heavy cream with coconut milk. Garnish with extra basil leaves.
