For the Crust:
- 8 oz feta cheese, crumbled
- 4 oz cream cheese, softened
- 2 tbsp Greek yogurt
- 1 tbsp honey
- 1 tbsp lemon juice
- 1/2 tsp black pepper
- 1 cup fresh strawberries, hulled and halved
- 1 tbsp olive oil
- 1 tsp balsamic vinegar
- 1 tsp fresh thyme leaves
Instructions
1. Prepare the Crust:
- Preheat oven to 375Β°F (190Β°C). Toss strawberries with olive oil and balsamic vinegar, then spread on a baking sheet. Roast for 15-20 minutes until softened.
- In a food processor, combine feta, cream cheese, Greek yogurt, honey, lemon juice, and black pepper. Blend until smooth and creamy.
- Transfer the whipped feta to a serving bowl. Top with roasted strawberries and garnish with fresh thyme. Serve with crackers or toasted bread.
