Description

These crispy beef taquitos are filled with seasoned ground beef and melted cheese, wrapped in corn tortillas, and fried until golden. They make a delicious appetizer or snack, served with salsa and guacamole.


Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 10 small corn tortillas
  • Vegetable oil for frying

Instructions

  1. In a skillet over medium heat, cook the ground beef, onion, and garlic until the beef is browned and the onion is soft.
  2. Stir in chili powder, cumin, salt, and pepper. Cook for another 2 minutes. Remove from heat and mix in the shredded cheese until melted.
  3. Warm the tortillas to make them pliable. Spoon the beef mixture onto each tortilla and roll tightly.
  4. In a deep fryer or large pot, heat oil to 350°F (175°C). Fry the taquitos in batches until crispy, about 2-3 minutes per batch.
  5. Drain on paper towels and serve hot with your favorite dips.

Notes

For extra crispiness, ensure oil is hot before frying. Can be baked instead of fried for a healthier version at 400°F for 15-20 minutes.
