Description
These crispy beef taquitos are filled with seasoned ground beef and melted cheese, wrapped in corn tortillas, and fried until golden. They make a delicious appetizer or snack, served with salsa and guacamole.

- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
- 10 small corn tortillas
- Vegetable oil for frying
Instructions
- In a skillet over medium heat, cook the ground beef, onion, and garlic until the beef is browned and the onion is soft.
- Stir in chili powder, cumin, salt, and pepper. Cook for another 2 minutes. Remove from heat and mix in the shredded cheese until melted.
- Warm the tortillas to make them pliable. Spoon the beef mixture onto each tortilla and roll tightly.
- In a deep fryer or large pot, heat oil to 350°F (175°C). Fry the taquitos in batches until crispy, about 2-3 minutes per batch.
- Drain on paper towels and serve hot with your favorite dips.
Notes
For extra crispiness, ensure oil is hot before frying. Can be baked instead of fried for a healthier version at 400°F for 15-20 minutes.
