- 3–4boneless, skinless chicken breasts
- 3cloves fresh garlic, minced
- 1 cupgrated parmesan cheese
- 1 cuppanko breadcrumbs
- 2large eggs, beaten
- 2 tbspolive oil
- Salt, pepper, and Italian herbs to taste
Instructions
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Cut chicken breasts into even strips.
- In one bowl, whisk together eggs and a pinch of salt. In another bowl, combine panko breadcrumbs, parmesan cheese, minced garlic, and Italian herbs.
- Dip each chicken strip in the egg mixture then coat with the breadcrumb mixture. Press gently to adhere.
- Place coated strips on the baking sheet and drizzle with olive oil.
- Bake for 15-20 minutes until golden brown, flipping halfway for even crispiness.
