Description

A hearty and creamy soup made with ground beef, potatoes, and vegetables, perfect for a slow cooker.


Ingredients

  • 1 pound ground beef
  • 4 large potatoes, peeled and diced
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Brown the ground beef in a skillet over medium heat, then drain excess fat.
  2. Add the browned beef, diced potatoes, chopped onion, sliced carrots, chopped celery, chicken broth, garlic powder, salt, and black pepper to the crockpot.
  3. Cover and cook on low for 6-8 hours or until vegetables are tender.
  4. Stir in the heavy cream during the last 30 minutes of cooking.
  5. Serve hot and enjoy.

Notes

For a thicker soup, mash some potatoes before adding the cream.
