A hearty and creamy soup made with ground beef, potatoes, and vegetables, perfect for a slow cooker.

- 1 pound ground beef
- 4 large potatoes, peeled and diced
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 4 cups chicken broth
- 1 cup heavy cream
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Brown the ground beef in a skillet over medium heat, then drain excess fat.
- Add the browned beef, diced potatoes, chopped onion, sliced carrots, chopped celery, chicken broth, garlic powder, salt, and black pepper to the crockpot.
- Cover and cook on low for 6-8 hours or until vegetables are tender.
- Stir in the heavy cream during the last 30 minutes of cooking.
- Serve hot and enjoy.
Notes
For a thicker soup, mash some potatoes before adding the cream.
